Tasting Note
Crimson in colour with a purple hue. Aromas of lifted plum with dried thyme and briary characters. A juicy palate entry of plum and raspberry developing into briary and bushy herbaceousness, finishing dry and long. The chalky tannins integrated with acidity draw the flavours through the palate.

Vintage Characteristics
The merlot at Fermoy Estate is grown on a hanging cane trellis system designed to create natural balance in the vine allowing maximum fruit exposure. The result is excellent fruit flavours and colour. After 2006 it was so comforting to have vintage 2007 where everything ripened perfectly and early! If I had to pick a red from 07, merlot it would be. From the first day it smelt of fresh raspberry and my Mum's Christmas cake baking in the oven.

Vinification
The fruit is crushed lightly and pumped into static fermenters where it undergoes 10-14 day steady fermentation with periodic gentle pump overs to facilitate colour and flavour extraction. The fruit is pressed into barrel for 12-15 months barrel maturation before being fined, filtered and bottled. Those very good wines always shine from the first day in the winery and this certainly was the case. The fruit looked great and ferments smelt beautiful and as the wine was pressed into barrel it looked black, some of the best colour merlot we've seen for some years. The 2005 won gold at the Royal Melbourne Show and this is probably better – it would rank with the best merlot we've made.
