We had a particularly exciting pick this week as we began to harvest our Cabernet grapes including Fermoy's 'World's Greatest Cabernet' block. Margaret River is renowned for its excellent quality Cabernet Sauvignon, with our very own receiving international acclaim and numerous awards.
The Cabernet grapes are hand picked off our 35-year-old vines and taken to the winery where it undergoes whole bunch fermentation. This process requires regular plunging to ensure the skins impart incredible colour, flavour and tannins to the wine. These beautiful Cabernet parcels will then be pressed to older French Oak Barriques for maturation.
