2016 Fermoy Estate Cabernet Sauvignon Merlot Quarterly



Varietals (%’S):  55% Cabernet Sauvignon; 41% Merlot; 4% Shiraz

Appearance:  Dark crimson red with black tints.

Aroma:  The nose shows an array of rich black-fruit aromas – blackcurrant, berries and plums with notes of black olive, dark chocolate and vanilla bean.

Palate:    The palate unfolds in layers of black fruits, savoury herbs, dark chocolate and oak spice.  A soft and juicy mid-palate is supported by a framework of powder fine tannins which add structure and length. 

Oak Detail:  18 months maturation in a combination of 20% new and 80% seasoned French oak barriques from a selection of renowned Bordeaux cooperages.

Cellaring:  This finely structured wine is drinking well now but will continue to evolve over the next 6-8 years.

Alcohol Volume:  14.5%
Acidity:  Ph 3.65; TA 5.9 G/L

Residual Sugar:  1.0 g/L
