2017 Fermoy Estate Merlot Quarterly



Varietals (%’S):  87% Merlot; 10% Cabernet Sauvignon; 3% Shiraz

Appearance:  Rich plum red with black tints.

Aroma:  A core of sweet blue and red fruits – blueberry, redcurrant and plum intertwine with savoury notes of nori, black olive, roasted cooking herbs and tobacco leaf spice.

Palate:  Blueberries and plum fruits on the mid-palate lead to a lifted and savoury back palate of black olive, aromatic herbs and tobacco spice.  Wet earth tannins combine with oak notes of dark chocolate and cedar to add complexity and intrigue, while a bright acid line provides sweetness, structure and length to the finish.

Oak Detail:  18 months maturation in a combination of new (35%) and seasoned French oak barriques – using a selection of Bordeaux coopers.

Cellaring:  Tannins are sufficiently integrated to allow for immediate drinking, however, will continue to develop and evolve over the next 10 years.

Alcohol Volume:  14.0%
Acidity:  Ph 3.51: TA 6.2g/L

Residual Sugar:  0.4g/L
