Fermoy Estate

2018 Reserve Chardonnay

$65

Varietals (%’S):  100% Chardonnay

Appearance:  Pale, golden straw with bright green tints.

Aroma: A rich and powerful nose of ripe fig & nectarine, white flowers, seaspray and toasted nuts with hints of wood smoke and flinty char.

Palate:  A palate of depth and power - fleshy stone fruits, grapefruit, struck-match and toast balanced by textural phenolic drive and complexity. Refreshed by a briney, grapefruit acid line and framed by subtle oak char – gunsmoke, bacon, hazelnut.

Winemaking: Fruit was handpicked and whole-bunch pressed straight to barrel with full solids for natural ferment by wild yeast. Partial malolactic fermentation and judicious lees stirring during maturation built palate weight, texture and complexity. Blended via barrel selection, the wine was then heat and cold stabilised with minimal fining and filtered prior to bottling end of 2018.

Oak Detail:  10 months maturation in a combination of 66% new and balance 2nd use tight grained French oak barriques – Taransaud, Mercurey & Sirugue.

Cellaring: Drinking well now, this wine has the requisite fruit, phenolic weight and winemaking artefact to reward cellaring over the next 6 years.

Alcohol Volume:  13.0%
Acidity:  pH 3.34 TA 6.2 g/L

Residual Sugar:  1.0 g/L

Food Pairing: Drink with crispy skin roasted chicken – stuffed with red onion, garlic and preserved lemon.

94pts - “Medium straw to lemon hue. Grapefruit, struck-match and fresh cashew aromatics. A weight of stone fruit on entry. Layers of bacon fat and sea spray add interest. It has depth and weight throughout and flows quite long. Acidity does provide focus, but the finish is just a little flat. Still, a lovely chardonnay.
