Fermoy Estate
2020 Vintage Brut Rosé
Vintage: 2020 – fruit sourced from Pemberton, a cooler climate renowned for growing excellent fruit for sparkling wine. A nice warm and dry ripening period allowed for fruit to ripen gradually without disease pressure.
Varietals (%’S): 90% Pinot Noir; 10% Chardonnay
Appearance: Bright, pale salmon pink. Brilliant clarity, with a fine, persistent bead.
Aroma: Scents of rosehip, citrus blossom and wild strawberry with complexing notes of brioche, shortcrust, lemon cream and toasted cashews.
Palate: Made in the traditional method, this wine has spent 18 months on lees in bottle prior to disgorgement. This time allows for more complex characters and textures to evolve – pastry, nougat, cream complementing delicate fruit notes. A beautifully soft and delicate mousse and fine, persistent bead carry the flavours and continually refresh the palate.
Oak Detail: The base wine was fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.
Cellaring: Ready for immediate drinking and will continue to evolve and drink well over the next 4-5 years.
Food Pairing: A perfect aperitif wine, drink standing up, with canapes!
Alcohol Volume: 12.5%
Acidity: pH 3.35; TA 6.6g/L
Residual Sugar: 8.0g/L
