Our Cabernet Sauvignons

In the Vineyard
The original block
Planted in 1985, Fermoy’s original Houghton-clone Cabernet vines grow on gravel loam over clay, close to the Indian Ocean. Over four decades, this Wilyabrup site has produced Cabernet defined by purity of fruit, fine-grained tannin and poise.
Trained on a divided lyre trellis, the block demands close work by hand throughout the growing season.
These mature vines remain the foundation of Fermoy Wilyabrup Reserve Cabernet Sauvignon.

In the Cellar
Time and selection.
The Cabernets spend 18 months in French oak, left undisturbed apart from monthly topping. As the wines develop, each barrel is tasted and the final blends gradually emerge.
Fermoy Wilyabrup Cabernet Sauvignon brings together parcels from across the estate. Reserve is selected from the original 1985 block and released only when the vintage meets the standard.
Production of Reserve is capped at 500 cases.
Decanter World Wine Awards
