2015 Fermoy Estate Merlot Half Yearly


Varietals (%’s):  93% Merlot; 5% Cabernet Sauvignon; 2% Shiraz

Appearance:  Rich plum red with black tints.

Aroma:  A core of sweet black fruits – cherry, blackberry and plum intertwine with savoury notes of black olive and rosemary spice.

Palate:  Black cherry and ripe plum fruits on the mid-palate lead to a rich and savoury back palate of black olive, aromatic herbs and tobacco spice.  Oak notes of cigar box, dark chocolate and cedar spice add complexity and intrigue, while a bright acid line provides structure and length to the finish.

Oak Detail:  18 months maturation in a combination of new (35%) and seasoned French oak barriques – using a selection of Bordeaux coopers.

Cellaring:  Tannins are sufficiently integrated to allow for immediate drinking, however will continue to develop and evolve over the next 10 years

Alcohol Volume:  13.8%

Acidity:  pH 3.46; TA 6.2g/L

Residual Sugar:  <1.0g/L
