2015 Fermoy Estate Shiraz


VARIETALS (%’S):  100% Shiraz

Appearance:  Rich plum red with black tints.

Aroma:  Aromas of blueberry, black cherry and plum with complexing notes of charcuterie, vanilla bean and toasted oak spice.

Palate:    With 4 years of bottle age, this wine is showing lovely, subtle complexity.  Fleshy blue and black fruits precede a lovely suite of savoury notes – olive pip, cracked pepper, cured meats and rosemary – through the middle palate.  Soft, pliable tannins lead into a bright blueberry acid line to provide length and focus to the finish, while toasted oak spice adds richness and complexity.  

Oak Detail:  15 months maturation in a combination of new and seasoned French oak barriques.

Cellaring:  Tannins are sufficiently soft and pliable to drink now but will continue to evolve over the next 3-6 years.

Alcohol Volume:  14.0%
Acidity:  pH 3.7; TA 5.5 g/L

Residual Sugar:  0.8 g/L
