Fermoy Estate

2016 Shiraz

VARIETALS (%’S):  100% Shiraz

Appearance:  Rich plum red with brickish tints.

Aroma:  Aromas of black fruits, cocoa and herbs with complexing notes of roasted meats and brown spice.

Palate:    With more than 4 years of bottle age, this medium-bodied wine is showing subtle, secondary complexity. Fleshy black and red fruits precede an array of savoury notes – woody herbs, cracked pepper and roasted meats – through the middle palate. Soft, pliable tannins coat dark, exotic spices.

Oak Detail:  15 months maturation in a combination of new and seasoned French oak barriques.

Cellaring:  Tannins are sufficiently soft and pliable to drink now, but will continue to evolve over the next 3-6 years.

Food Pairing: Slow-cooked beef with creamy polenta.

Alcohol Volume:  14.5%
Acidity:  pH 3.7; TA 5.85 g/L

Residual Sugar:  <1.0 g/L

Awards & Ratings:

Bronze – 2018 Royal Sydney Wine Show.

Bronze - 2017 & 2018 Wine Show of WA.

95pts: "Eggplant-purple colour. An assertive bouquet of damsons and oak-spice. The palate is rich and smooth, showing substantial flavour of blackberries, liquorice and tea leaves. Soft, ripe tannins, warmth from alcohol and a long finish complete this wine. 2021–2033". Amanda Yallop, The Real Review, 2 April 2021
