2017 Cabernet Merlot


Varietals (%’S):  60% Cabernet Sauvignon; 37% Merlot; 3% Shiraz

Appearance:  Dark crimson red with black tints.

Aroma:  The nose shows an array of red and black fruits – redcurrant, raspberry and blackberry with notes of liquorice, dark chocolate and savoury herbs.

Palate:    The medium weighted palate unfolds in layers of fruit, savoury herbs, chocolate and oak spice.  A soft and juicy mid-palate is supported by a framework of powder fine tannins which add structure and length. 

Oak Detail:  18 months maturation in a combination of 20% new and 80% seasoned French oak barriques from a selection of renowned Bordeaux cooperages.

Cellaring:  This finely structured wine is drinking well now, but will continue to evolve over the next 6-8 years.

Alcohol Volume:  14.0%
Acidity:  pH 3.63; TA 5.6 g/L

Residual Sugar:  0.9 g/L

92pts: "Fermoy Estate does cabernet well but it does, unusually enough, merlot even better. So merlot is a lifter rather than a leaner here. The quality here is very good. It has good fruit and texture, an array of varietal flavours and an extended finish. Mulberry, blackcurrant, bay leaves and tobacco are the main characters. Acidity is slightly apple-like but I like what I’m seeing in general here quite a lot." Campbell Mattinson, Winefront, January 2020.
