2017 Fermoy Estate Reserve Semillon
Varietals (%’S): 100% Semillon
Appearance: Pale straw with bright green tints.
Aroma: Complex aromas of honeysuckle, beeswax, lemon rind, nettle, walnut & freshly cut straw.
Palate: Barrel fermentation gives this wine structure & texture, with vibrant fruit notes of lemon & kiwi-fruit overlaying grilled nuts, sour herbs of nettle & sorrel, & sweet spices of vanilla & aniseed. A clean & precise, cool-climate acid line provides structure, definition & palate length.
Winemaking: Fruit was machine picked in the cool of night & pressed directly to tank for settling prior to fermentation in new French oak barriques. Following 3 months maturation in this new oak, the wine was siphoned across to seasoned oak to undergo a further 6 months maturation on ferment lees prior to blending in tank. Wine was heat & cold stabilised with minimal fining & filtered prior to bottling in December 2017.
Oak Detail: Fermentation & subsequent 3 months maturation in 100% new French oak barriques (Bordeaux cooperages) prior to a further 6 months maturation in a combination of seasoned French oak barriques.
Cellaring: Semillon as a variety is well suited to ageing, which combined with the new oak component means this wine will continue to evolve over the next 10 years.Alcohol Volume: 12.0%

93pts: "Barrel-fermented in 100% new French oak, followed by 9 months of ageing in partial new & seasoned oak, this is an ambitious Semillon with aspirations of white Graves in its sights. Lanolin, lemon blossom, talc, curd & honeysuckle notes are all evident. The oak is well handled, needing further time to settle. This should age very well over the next decade. Drink by 2029."
