2018 Fermoy Estate Semillon Sauvignon Blanc

Vintage:  2018

Varietals (%’S):  50% Semillon; 48% Sauvignon Blanc; 2% Chardonnay

Appearance:  Brilliant, pale straw yellow with green tints.

Aroma:  Fresh & bright aromatics of nettle, kiwi fruit & lemon sherbet overlay a subtle cedar & talc spice note.

Palate:  The palate is bright, textured & refreshing – transitioning from blackcurrant leaf & dried herb notes to fleshy kiwi fruit & guava.  A mouth-watering lemon acid crunch & subtle oak complexity provide drive, persistence & length.

Oak Detail:  A portion of the blend (~20%) underwent fermentation & 4 month’s maturation in a combination of new & seasoned French oak, while the balance was fermented cool in stainless steel tanks to retain freshness & aromatics.  Maturation on ferment lees contributed to texture, mouthfeel & overall complexity.

Cellaring:  Ready for immediate drinking & will continue to drink well over the next 2-3 years.

Alcohol Volume:  12.8%

Acidity:  pH 3.25; TA 7.0g/L

Residual Sugar:  1.5g/L
