2019 Semillon Sauvignon Blanc
VARIETALS (%’S): 56% Semillon; 44% Sauvignon Blanc
Appearance: Brilliant, pale straw yellow with green tints.
Aroma: Fresh, complex aromatics of guava, white flowers & kaffir lime leaf overlay subtle cedar & lemon curd notes.
Palate: The palate is bright, textured & refreshing – transitioning from cut straw & fresh asparagus to fleshy guava fruits. A mouth-watering lemon curd acid provides some crunch & texture, while a subtle oak complexity provides drive, persistence & length.
Oak Detail: A portion of the blend (~15%) underwent fermentation & 4 month’s maturation in a combination of new & seasoned French oak, while the balance was fermented cool in stainless steel tanks to retain freshness & aromatics. Maturation on ferment lees contributed to texture, mouthfeel & overall complexity.
Cellaring: Ready for immediate drinking & will continue to drink well over the next 2-3 years.

Acidity: pH 3.27; TA 7.0g/L
Residual Sugar: 1.2g/L
