Fermoy Estate
2019 Cabernet Shiraz
LIMITED RELEASE - available while stocks last.
Varietals (%’S): 69% Cabernet Sauvignon; 31% Shiraz – a classic, uniquely Australian red blend.
Vintage: 2019 – a cooler vintage, but a warm & dry period in March-April provided perfect conditions for red grape ripening.
Appearance: Vibrant red with black and purple hues.
Aroma: Lovely, perfumed aromas of boysenberry, violets and blueberries. Complexing notes of bramble, liquorice, saltbush, red earth, cocoa and coffee grinds.
Palate: Cool, lithe and elegant Cabernet notes of boysenberry, blackcurrant and alpine herbs are complemented by the depth and flesh of Shiraz, blue fruits and red flowers. Medium weighted, this wine has a freshness and lightness of foot with complexing notes of salted liquorice, chocolate and cedary spice. A succulence of acid refreshes the palate and cool, graphite like tannins slide from start to finish.
Oak Detail: Components were matured in French oak barriques for 18 months prior to blending. The final blend saw 35% new oak, with the balance in seasoned barrels. The blend spent some 6 months in tank to integrate and harmonise prior to bottling.

Food Pairing: Five-spice roasted duck with soy glaze.
