2021 Shiraz Cabernet
Fermoy 'Blackwater' Shiraz Cabernet – the town of Fermoy (in Co.Cork, Ireland), after which we are named, is situated on the River Blackwater.
Vintage: 2021 – a cooler vintage by Margaret River standards resulting in wines with heightened aromatics and bright natural acids.
Varietals (%’S): 63% Shiraz; 30% Cabernet Sauvignon; 7% Malbec
Appearance: Vibrant ruby red.
Aroma: Lovely, perfumed aromas of blueberries, satsuma plum and red flowers. Complexing notes of cinnamon spice, red peppercorn and red liquorice.
Palate: Lightly framed and juicy, this wine is bright and refreshing. Blue and red fruits – violets, plums and red cherry lead into the structure and spice of rosemary, orange blossom, star anise and red earthen tannins.
Oak Detail: Components were matured in French oak barriques for 15 months prior to blending. The final blend saw 25% new oak, with the balance in seasoned barrels. The blend spent some 3 months in tank to integrate and harmonise prior to bottling.
Cellaring: Can be drunk now or cellared for up to 8 years.
Food Pairing: Five-spice roasted duck with soy glaze.
Alcohol Volume: 14.5%
Acidity: pH 3.59; TA 6.54g/L
Residual Sugar: <1.0g/L
