2016 fe Shiraz
Varietals (%’s):  100% Shiraz.
Appearance:  Deep cherry red with ink black tints.
Aroma:  Lifted, floral aromas of violet, black cherry and sarsaparilla overlay subtle oak spices of vanilla and aniseed.
Palate:  Palate is medium-full bodied, with soft and juicy plum, cherry and blueberry fruit characters to the fore. An array of aromatic oak spices add complexity, whilst a subtle oak char adds depth of flavour.  A delicate and flavoursome blueberry acid line provides length, poise and freshness to the finish.
Oak Detail:  15 months maturation in a combination of new and seasoned French oak barriques.
Cellaring:  Whilst designed to be ready for immediate consumption, this wine will benefit from anywhere up to 8 years in the bottle.
Alcohol Volume:  14.5%
Acidity:  pH 3.6 TA 6.0 g/L
Residual Sugar:  ~2.0 g/L

2014 Estate Cabernet Sauvignon Merlot

Varietals (%’s):  56% Cabernet Sauvignon; 36% Merlot; 8% Shiraz
Appearance:  Dark crimson red with black tints.
Aroma:  The nose shows an array of red-fruit aromas – redcurrant, plum and raspberry, with high notes of aniseed, mint and thyme.
Palate:    The palate unfolds in layers of red fruits, savoury herbs and dark chocolate and vanilla oak spice notes.  A soft and juicy mid-palate is supported by a framework of powder fine tannins which add structure and length. 
Oak detail:  18 months maturation in a combination of 15% new and 85% seasoned French oak barriques from a selection of renowned Bordeaux cooperages.
Cellaring:  This finely structured wine is drinking well now, but will continue to evolve over the next 4-6 years.
Alcohol volume:  14.5%
Acidity:  pH 3.51 TA 6.4 g/L
Residual sugar:  1.0 g/L
