2018 Vintage Brut Premier
Vintage: 2018 – fruit sourced from Pemberton, a cooler climate renowned for growing excellent fruit for sparkling wine. A nice warm and dry ripening period allowed the fruit to ripen gradually without disease pressure.
Varietals: 52% Pinot Noir; 48% Chardonnay
Appearance: Pale straw colour with green tints, brilliant clarity, ultra-fine and persistent bead.
Aroma: Complex savoury aromas of truffle, mushroom & brioche overlay fruit characters of citrus and nashi pear.
Palate: Made in the traditional method, this wine has spent over 4 years on lees in bottle before disgorgement. This extended contact time allows more complex characters and textures to evolve – with baked bread, crème fraiche and mushroom notes complementing delicate sea spray, citrus & pear fruits. A beautifully soft and delicate mousse and fine, persistent bead carry the flavours and continually refresh the palate.
Oak Detail: The base wine was partially fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.
Cellaring: Ready for immediate drinking and will continue to evolve and drink well over the next 2-3 years.
Food Pairing: Drink with yum cha on a Sunday morning.
Alcohol Volume: 12.5%
Acidity: pH 3.28; TA 7.5g/L
Residual Sugar: 4.2g/L
