Vintage: 2019 – a cooler vintage perfect for ripening grapes for sparkling. Good natural acid retention alongside bright and delicate fruit flavours.

Varietals: 55% Pinot Noir; 45% Chardonnay

Appearance: Subtle, pale blush salmon. Brilliant clarity, with a fine, persistent bead.

Aroma: Complex aromas of freshly shucked oysters, brine and mushroom give way to perfumed fruits of pink lady, grapefruit and citrus blossom.

Palate: Crafted using the traditional method, this wine undergoes a four-year aging process on lees in the bottle before disgorgement. This prolonged maturation fosters the development of intricate characteristics and textures, unveiling notes of baked pastries, truffles, and cream that harmonize with delicate, aromatic fruit nuances. The result is a wine with a beautifully soft and delicate mousse and a fine, persistent bead that gracefully carries the flavours, consistently refreshing the palate.

Oak Detail: The base wine was partially fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.

Cellaring: Ready for immediate drinking and will continue to evolve and drink well over the next 2-3 years.

Food Pairing:  Sashimi, ceviche, tartare – something raw & delicious!
