2022 Blackwater - Shiraz Cabernet Malbec
Namesake: The town of Fermoy, located in County Cork, Ireland, from which our name is derived, sits on the banks of the River Blackwater.
Vintage: 2022 – a classic Margaret River vintage with a warm and dry ripening period moderated by afternoon sea-breezes and cool nights.
Varietals: 40% Shiraz | 37% Cabernet Sauvignon | 14% Malbec | 9% Petit Verdot
Appearance: Vibrant ruby red.
Aroma: Intriguing aromas of violet, sour cherry, raspberry and mint. Complexing notes of cedar spice, cinnamon and ironstone.
Palate: Structural yet juicy, this wine is bright and refreshing. Red plum, cherry, bramble fruits lead into the structure and spice of oak and ferrous tannins.
Oak Detail: Components were matured in French oak barriques for 15-months prior to blending. The final blend saw 20% new oak, with the balance in seasoned barrels. The blend spent some 3-months in tank to integrate and harmonise prior to bottling.
Cellaring: Can be drunk now or cellared for up to 6-8 years.
Food Pairing: Crispy skinned pork belly.
