2013 Fermoy Estate Reserve Cabernet Sauvignon
Varietals: 97% Cabernet, 3% Shiraz
Appearance: Dark ruby red
Aroma: Vibrant notes of blackcurrant, black cherry and dark chocolate
Palate: Full bodied and structured, the palate is framed with firm but silken tannins. Rich blackcurrant, black cherry fruits complement classic Margaret River characters of bay leaf and lavender. Secondary oak notes of dark chocolate and cigar box add richness and complexity before a long structured finish.
Oak Detail: Hand-picked, hand-plunged in open top fermenters. 18 months maturation in oak. 50% new, 50% 1 year old French barriques.
Alcohol volume: 14%
Acidity: 3.4 pH/ 6.35 TA
Residual Sugar: < 1 G/L
