Fermoy Estate

2022 Chardonnay

$40

Vintage: 2022 – a classic Margaret River vintage with a warm and dry ripening period moderated by afternoon sea-breezes and cool nights.

Varietals (%’s):  100% Chardonnay

Appearance:  Pale, golden straw with brilliant green tints.

Aroma:  Vibrant fruit aromatics of yellow stone fruits, white fig & grapefruit with oyster-shell & gun-flint complexity.

Palate:  A full-flavoured & textured palate with balance, power and length. The wine shows good fruit weight – yellow nectarine and grapefruit, and complexity of flavour – seaspray, salted limes & toasted hazelnuts. A succulent acid line balances phenolic crunch to ensure a wine of texture and substance.

Winemaking: Fruit was handpicked and whole-bunch pressed straight to barrel with full solids for natural ferment by wild yeast. Partial malolactic fermentation and judicious lees stirring during maturation built palate weight, texture and complexity. A blend of separate parcels, the wine was allowed to harmonise in tank before being heat and cold stabilised with minimal fining and filtered prior to bottling in February 2023.

Oak Detail: 100% barrel fermented and matured for 10 months in a combination of 25% new, balance 1 and 2-year old French oak barriques.

Cellaring:  Ready for immediate drinking and will continue to drink well over the next 4-5 years.

Food Pairing:  Drink with crispy-skinned pork belly.

Alcohol Volume:  12.5%
Acidity:  pH 3.35; TA 6.75g/L

Residual Sugar:  1.0g/L
