2017 Vintage Brut Premier
Varietals (%’S): 60% Chardonnay; 40% Pinot Noir
Appearance: Pale straw colour with green tints, brilliant clarity, ultra-fine and persistent bead.
Aroma: Bright and vibrant aromas of lemon blossom, oyster shell, baked apple & strawberry tart and lightly toasted nuts.
Palate: Made in the traditional method, this wine has spent over 4 years on lees in bottle prior to disgorgement. This extended contact time allows for more complex characters and textures to evolve – with brioche, curd, oyster shell and flint complementing delicate citrus & berry fruit notes. A beautifully soft and delicate mousse and fine, persistent bead carry the flavours and continually refresh the palate.
Oak Detail: The base wine was partially fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.
Cellaring: Ready for immediate drinking and will continue to evolve and drink well over the next 4-5 years.
Food Pairing: Oysters, canapés.
