2018 Vintage Brut Rosé
Vintage: 2018 – fruit sourced from Pemberton, a cooler climate renowned for growing excellent fruit for sparkling wine. A nice warm and dry ripening period allowed for fruit to ripen gradually without disease pressure.
Varietals (%’S): 52% Pinot Noir; 48% Chardonnay
Appearance: Bright, pale coral pink. Brilliant clarity, with a fine, persistent bead.
Aroma: Scents of rose petal, pink lady, raspberry and citrus blossom with complexing notes of brioche, field mushroom, oyster shell and toasted nuts.
Palate: Made in the traditional method, this wine has spent 4 years on lees in bottle prior to disgorgement. This extended time allows for more complex characters and textures to evolve – baked pastries, truffles and cream complementing delicate, perfumed fruit notes. A beautifully soft and delicate mousse and fine, persistent bead carry the flavours and continually refresh the palate.
Oak Detail: The base wine was partially fermented in seasoned French oak barriques and puncheons to help build texture and mouthfeel.
Cellaring: Ready for immediate drinking and will continue to evolve and drink well over the next 4-5 years.
Food Pairing: Sashimi, ceviche, tartare – something raw & delicious!
