2017 Reserve Cabernet Sauvignon
Varietals (%’S): 100% Cabernet Sauvignon
Appearance: Rich ruby red with black tints.
Aroma: Aromas of blackcurrant, boysenberry, raspberry and bay-leaf herb with lifted notes of violets, dark chocolate and cedary oak spice.
Palate: Fine-boned and elegant, this medium-weighted wine still displays power and gravitas. Succulent, concentrated fruits through the mid-palate lead into herb nuance and complexing dustings of spice. Long, fine tannins and carefully managed tight-grained oak provide structure, framework and length to ensure a beautifully elegant finish.
Oak Detail: 18 months maturation in a combination of new (50%) and seasoned French oak barriques.
Cellaring: Tannins are plentiful – providing a structural framework to the wine and ensuring good cellaring potential of 20+ years, however they are sufficiently fine and elegant to allow for immediate enjoyment.

Acidity: pH 3.64 TA 6.4 g/L
Residual Sugar: 0.6 g/L
2021 Reserve Chardonnay
Vintage: 2021 – a cooler vintage by Margaret River standards resulting in white wines with heightened aromatics and bright natural acids.
Varietals (%’S): 100% Chardonnay
Appearance: Pale straw with bright green tints.
Aroma: A lovely balance of white blossom perfume, ripe fruits –peach, custard apple and grapefruit – and complexing notes of toasted cashew, lemon cream, crushed shells and sulphide funk.
Palate: Balance is the key – lovely weight of stone fruits, grapefruit, frangipani and brioche, with succulent acid leading into savoury complexities from full-solids wild ferment in barrel – seaspray, struck match, chipped shell and burnt butter. A wine with depth, phenolic weight and length of flavour and refreshment.
Winemaking: Fruit was handpicked and whole-bunch pressed straight to barrel with full solids for natural ferment by indigenous yeast. Partial malolactic fermentation and judicious lees stirring during maturation built palate weight, texture and complexity. Blended via barrel selection, the wine was allowed to rest in tank for 1 month, then heat and cold stabilised with minimal fining and filtered prior to bottling in March 2022.
Oak Detail: 11 months maturation in a combination of 50% new and balance 2nd use tight grained French oak barriques – Francois Freres, Taransaud & Mercurey.
Cellaring: Drinking well now, this wine has the requisite fruit, phenolic weight and winemaking artefact to reward cellaring over the next 10 years.

Acidity: pH 3.28 TA 6.8 g/L
Residual Sugar: <1.0 g/L
Food Pairing: Drink with marron – grilled with garlic butter, served with fresh rocket salad.
