2019 Reserve Semillon

Varietals: 90% Semillon; 10% Chardonnay.

Appearance: Pale white gold.

Aroma: Clean, Pristine. perfumed aromas of lemon blossom, talc, nashi pear with hints of cashew nut, nettle and jasmine.

Palate: Precise and delicate notes of citrus blossom, kaffir lime, seaspray. Tightly wound acid lines give length, carry and structure - taut, focused. Some lightly toasted nuts, hints of cedar and talc spice only suggest of oak, but also years of development ahead.

Winemaking: Fruit was machine picked in the cool of night and pressed directly to tank for settling prior to fermentation in 80% new oak. Following 10 months maturation on ferment lees the wine was blended in tank. The wine was heat and cold stabilised with minimal fining and filtered prior to bottling in March 2019.

Oak Detail: Fermentation and subsequent 3 months maturation in 80% new French oak barriques (Bordeaux cooperages) before being siphoned across to a combination of seasoned French oak barriques for a further 7 months maturation.

Cellaring: Semillon as a variety is well suited to ageing, which combined with the new oak component means this wine will continue to evolve over the next 12 years.
